ACHIOTE FOOD SERVICE

DESCRIPTION: Deep red seed traditionally used in Mexican and Asian cuisine. It gives dishes an orange hue along with a slightly earthy and vegetal flavor. Ideal for adding color and character to sauces, marinades, stews, rice dishes, and brines. Highly valued as a natural ingredient to enhance both the aesthetics and flavor of preparations.
INGREDIENTS: Achiote seeds (Bixa orellana).
ORIGIN: Peru.
TASTING NOTES: They have a mild, slightly earthy and bitter flavor, with notes reminiscent of nutmeg and a floral hint. Their main characteristic is their immense natural coloring power.
USE: Primarily used to infuse oils or fats, giving them a vibrant reddish color. It is the soul of Yucatecan and Caribbean cuisine, essential for marinating meats such as in cochinita pibil. It is also added to broths, rice, and stews to provide a warm orange hue.
STORAGE: Store in a dry, dark, and cool place.
