BLACK CARDAMOM

DESCRIPTION: Whole black cardamom pods, with an intense and smoky aroma, and a deep flavor with earthy and slightly mentholated notes. Widely used in Indian and Asian cuisine for curries, rice dishes, stews, meats, and spice blends. It adds an exotic, warm, and sophisticated nuance to savory dishes and some gourmet infusions.
INGREDIENTS: Whole black cardamom (Amomum subulatum).
ORIGIN: India, Guatemala and Sri Lanka.
TASTING NOTES: It has a very distinctive, intensely smoky and earthy aroma, with notes reminiscent of camphor and wood. Unlike green cardamom, it is less sweet and much more rustic and deep.
USE: It is a fundamental spice in slow-cooked dishes. It is mainly used in savory recipes such as powerful curries, meat stews, pilaf rice, and intense soups. The whole pod (slightly crushed) is usually used to infuse the dish, then removed before serving or left as a decorative element.
