DESCRIPTION: Dried clove buds, with an intense, warm, and sweet aroma, and a pungent flavor with spicy and balsamic notes. Widely used in traditional and gourmet cuisine, especially in stews, meats, curries, pickles, pastries, and beverages like mulled wine. Its aromatic potency adds depth and warmth to any preparation.
INGREDIENTS: Whole cloves (Syzygium aromaticum).
ORIGIN: Madagascar
TASTING NOTES: It has an extremely intense, warm, and pungent aroma. Its flavor is strong, spicy, and leaves a slightly numbing sensation on the palate, with very pronounced sweet and woody notes.
USE: It is used in both sweet and savory dishes. It is key in rice pudding, fruit compotes, and cookies, but also in broths, game meats, and stews. It is often stuck into onions to flavor stocks or used whole in cooking water. Due to its potency, it is recommended to use it sparingly.
