DESCRIPTION: Whole black lemons, fermented, smoked, and sun-dried, with an intense citrus aroma and toasted and smoky notes. Widely used in Middle Eastern cuisine for stews, rice dishes, legumes, and sauces. They provide a deep, acidic, and slightly bitter flavor, characteristic of Persian and Arab gastronomy. They can be used whole, crushed, or ground to enhance the flavor of dishes.

ORIGIN: Iran
TASTING: Loomi is a lemon that is cooked in salt water and left to dry in the sun until it oxidizes. The result is an intensely citrus aroma, with complex, smoky, and fermented notes not found in fresh lemon.
USE: Key in Persian and Persian Gulf cuisine. It is used by piercing the fruit so that its oxidized juices flavor broths, rice, and lamb stews. It can also be ground to use as a spice in fish and chicken marinades, providing a dark and deep acidity.
