DESCRIPTION: Fermented, smoked, and sun-dried whole dark limes with an intense citrus aroma and toasted, smoky notes. Widely used in Middle Eastern cuisine for stews, rice dishes, legumes, and sauces. They provide a deep, sour, and slightly bitter flavor, characteristic of Persian and Arab gastronomy. They can be used whole, crushed, or ground to enhance the flavor of dishes.
INGREDIENTS: Whole black lime (Citrus latifolia).
ORIGIN: Iran
TASTING NOTES: Loomi is a lime that is boiled in salt water and left to dry in the sun until oxidized. The result is an intensely citrusy aroma with complex, smoky, and fermented notes not found in fresh lime.
USE: Key in Persian and Persian Gulf cuisine. It is used by piercing the fruit so that its oxidized juices flavor broths, rice dishes, and lamb stews. It can also be ground and used as a spice in fish and chicken marinades, providing a dark and deep acidity.
STORAGE: Store in a dry, dark, and cool place.
