DESCRIPTION: Whole pink peppercorns (Schinus terebinthifolius), valued for their vibrant color, sweet aroma, and mild flavor with fruity and floral notes. ORIGIN: Brazil and Netherlands
TASTING NOTES: Although called pepper, it is actually the berry of a resinous shrub. It has a very delicate, slightly sweet and fruity flavor, with notes reminiscent of pine and a subtle hint of spice. Its texture is brittle and soft on the palate.
USES: It is highly valued both for its flavor and its great decorative value. It is ideal for accompanying white fish, seafood, carpaccios, and fresh cheeses. In pastry, it combines surprisingly well with chocolate and fruit-based desserts. In mixology, it is a classic ingredient for decorating Gin and Tonics, adding color and a very elegant resinous aroma. It is recommended to add it whole or lightly crushed at the end of the dish.
