DESCRIPTION: An intense red powdered spice obtained from the dried and ground fruit of the Rhus coriaria shrub. With a sour, fruity, and slightly salty flavor, it is used as a natural substitute for lemon or vinegar in Middle Eastern cuisine. Ideal for salads, meats, fish, legumes, and cold dishes like hummus or fattoush, adding freshness and balance.
INGREDIENTS: Ground sumac (Rhus coriaria).
ORIGIN: Turkey
TASTING NOTES: It is a surprising spice due to its intense, pungent, and slightly fruity citrus flavor. Unlike lemon, it provides a "dry" and deep acidity, with a vibrant crimson color that makes it unmistakable. It is the perfect balance between acidic and earthy.
USE: It is a star ingredient in the Za'atar blend. It is mainly used as a finishing touch in salads (like the famous Fattoush), over hummus, yogurt, or fresh cheeses. It is excellent for marinating poultry, fish, and lamb skewers, as its acidity helps tenderize fibers and enhance the meat's flavor. It also works wonderfully sprinkled over thinly sliced raw onion to accompany grilled dishes.
