DESCRIPTION: Intense red powdered spice obtained from the dried and ground fruit of the Rhus coriaria shrub. With a sour, fruity, and slightly salty taste, it is used as a natural substitute for lemon or vinegar in Middle Eastern cuisine. Ideal for salads, meats, fish, legumes, and cold dishes like hummus or fattoush, providing freshness and balance.

TASTING NOTES: It is a surprising spice due to its intense citrusy, pungent, and slightly fruity flavor. Unlike lemon, it provides a "dry" and deep acidity, with a vibrant garnet color that makes it unmistakable. It is the perfect balance between acidic and earthy.
USE: It is a star ingredient in the Za'atar blend. It is primarily used as a finishing touch on salads (such as the famous Fattoush), over hummus, yogurt, or fresh cheeses. It is excellent for marinating poultry, fish, and lamb skewers, as its acidity helps tenderize the fibers and enhance the meat's flavor. It also tastes wonderful sprinkled over thinly sliced raw onion to accompany grilled dishes.
