Chef Lab Xanthan Gum is a 100% plant-based thickener and stabilizer, obtained by natural corn fermentation.

It provides smooth, creamy and homogeneous textures, guaranteeing perfect stability in emulsions, sauces, drinks or creams without altering flavor, color or aroma.

Its versatility makes it one of the most used technical ingredients in modern cuisine and the food industry, in both cold and hot preparations.

Compatible with all types of liquids and perfectly soluble, it offers consistent results even at low concentrations (0.2-1%).

INGREDIENTS:

Xanthan gum (E-415) 100%. Obtained by natural fermentation of corn starch.

DOSAGE AND USE:

Add directly to the liquid with a hand mixer or stick blender until completely dispersed.

Approximate dosages:

  • Slightly thick fluid texture: 1–2 g/l
  • Creamy or sauce-like texture: 3–5 g/l
  • Dense emulsion or fluid gel: 6–10 g/l

Stable in cold, heat, freezing and acidic environments. No cooking required.
